Ingredients:

- 2 slices of whole wheat bread
- 1 ripe avocado
- 2 large eggs
- 2-3 ounces of smoked salmon
- Fresh lemon juice
- Salt and pepper to taste
- Optional toppings: sliced tomatoes, red onion, micro greens, or sprouts

Instructions:

2. After that prepare the avocado cut into two half pieces, removing the pit, and scooping out the flesh into a bowl.

3. Mash the avocado with a fork and add a squeeze of fresh lemon juice, salt, and pepper to taste. Mix well.

4. In a separate pot, bring water to a gentle simmer. Add a splash of vinegar (optional) to help the eggs set.

5. Crack one egg into a small bowl or cup. Create a gentle whirlpool in the simmering water and slide the egg into the center. Repeat with the second egg.

6. Poach the eggs for about 3-4 minutes for a soft yolk or longer for a firmer yolk. Remove the eggs with a slotted spoon and set them on a plate lined with a paper towel to drain excess water.

7. Spread the mashed avocado evenly onto the toasted bread slices.

8. Place a layer of smoked salmon on top of the avocado.

9. Gently place one poached egg on each slice of bread, on top of the smoked salmon.

10. Season with a sprinkle of salt, pepper, and additional lemon juice if desired.

11. Add optional toppings such as sliced tomatoes, red onion, micro greens, or sprouts for extra flavor and texture.
